Niagara Falls to New York- most tasty Turkey dressing recipe

Getting ready to head back to New York from Niagara Falls for Thanksgiving.

I'll be periodically adding ethnic recipes as homage' to my Mom who's a terrific cook.
This time of year I am happy to add her most tasty turkey dressing.
This dressing is so filling - we often make a second to freeze for a main course later on.

Turkey dressing
(this never sees the inside of the turkey)

Preparation time about 30 minutes - Baking time - 350 for 1 hour

After you have removed the 'innards' from your turkey, rinse them, and place in a 2.5 qt saucepan
Add
1 small onion scored to release flavor
1 stalk of celery cut ( leave greenery on)
add water to just cover and cook for 20 min. on medium heat
Optional - you can add 1 or 2 chicken bouillion cubes

When cooked, remove meat and place in a large bowl
Add
1 package bought or homemade croutons
1 to 2 cups of your liquid cooked reserve - you want to moisten well but, not drown the dish.
1 pound of lean ground beef
1 egg
1 cup diced celery
1 cup diced onion
1/2 to 1 cup of walnut pieces
1/2 cup salted butter melted
1 teaspoon rosemary seasoning
Salt and pepper to taste.

Mix thoroughly and place in loaf or baking pan.
Preheat oven to 350 and bake for 1 hour.
Serves about 6

Prep can be done the night before and baked along with the rest of your dinner.
You can also substitute ground turkey or chicken for the ground beef.
